Smoke Chicken with Unique Marinade
1 (3- to 3 1/2-lb.) whole chicken, halved out
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh basil
1/4 cup chopped fresh parsley
1/4 cup peanut oil
6 tablespoons olive oil
2 tablespoons Dijon mustard
4 teaspoons brown sugar
2 tablespoons fresh lemon juice
4 teaspoons Worcestershire
1 minced garlic clove
1/2 teaspoon black pepper
2 teaspoons salt
Combine all ingredients, except the chicken, in a bowl and mix well. Then take the mixture and pour it into a ziplock freezer bag. The 1 gallon size. Now you can add the chicken. Turn it all around several times to make sure the chicken gets coated real good. Place in refrigerator and allow to marinate for 24 hours.
Preheat your smoker to 300 degrees. Use Hickory chips or pellets for this recipe. Grab a disposable aluminum foil pan to put your chicken in. Make sure it is skin-side up. Take the marinade that’s left in the bag and pour it all over the chicken. Now put it on the smoker and cook for 2 hours or until the meat temp is 175 degrees.
