Magnificent Smoked Beef Shoulder

Ingredients:

Beef Shoulder Clod
Au Jus

Meat Injector
Favorite Beef Rub
Large Ziplock bag

 

Directions:

Inject beef shoulder clod with au jus.  Do one injection per inch.  Once that is complete apply liberally your favorite beef rub.  Now take your ziplock bag and put your meat in it and place in the fridge for 24 hours. After 24 hours is up go ahead and preheat your smoker to 225 degrees.  After smoking the clod for about 6 hours go ahead and baste with your Au Jus.  This is a good 20-24 hr. cook, so make sure you are basting every 4-6 hours. Internal target temperature is going to be around 175 degrees. Once the shoulder reaches 175 degrees remove and let rest for 45 minutes.  You are going to absolutely love this piece of meat!  Enjoy!
