Green Marinated Chicken Kababs


4 chicken breasts (cubed)
50g basil
50g flat-leaf parsley

25g coriander
1/2 tsp fine sea salt
4 garlic cloves, peeled
zest of 2 lemons
juice of 1 lemon
75ml olive oil


In a blender put your 4 garlic cloves, then add olive oil, basil, parsley, coriander, zest of 2 lemons, and juice from 1 lemon.  Completely blend. Now place your cubed chicken in a bowl and pour the marinade over the chicken.  Cover with tin foil and put in the fridge for 24 hours. Now soak wooden skewers in water for about an hour.  Put your marinaded chicken on the skewers. Go ahead and sprinkle a little bit a salt on the kababs right before they go on the grill. Preheat your grill to high.  Place kababs on grill turning every 4 minutes for 16 minutes total. Now remove them from the grill and let rest for 10 minutes.  Enjoy!
