Grilled Bacon and Cheese Meatballs!


  • 500 gr minced meat
  • 1 egg
  • Crumbled rusk (dry biscuit or twice-baked bread)
  • 20 mozzarella salad balls

  • 20 slices of bacon
  • 2 tbsp BBQ dry rub
  • BBQ Sauce of your choice


In a bowl mix the meat, egg, crumbled up rusk, and 2 tbsp of your favorite dry rub.  Now mix with your hands until it becomes a smooth mixture.  To create the meatball take some meat and flatten it out in your hand.  Now place a mozzarella ball in the center and roll the meat back into a ball with both hands.  You’ll get about 20 balls from these ingredients.  Now take 1 slice of bacon and wrap it around the prepared meatball.  Keep your creation together with a toothpick.

Set your BBQ for 350 degrees.  It should take only 15-20 minutes to cook, but don’t let them leave your sight.  At the 20 minute mark brush some BBQ Sauce on them and cook for another 5 minutes.  Done!  Holy cow these are good!
